Story
Mexico San Basilio comes to us from the high slopes of the Sierra Madre Occidental located in Nayarit, a state on the northeast side of Mexico. Nayarit is an emerging specialty coffee region catching up with neighboring states like Veracruz and Chiapas. Though jungle landscapes make large scale agriculture challenging, the benefit of the heavily arbored terrain is that it provides ample shade for growing coffee and sustaining endemic animal and plant life. What Nayarit lacks in coffee production volume, they make up for with coffees that have a more complex flavor profile.
This lot is composed of Bourbon, Caturra, Catuai, and the much sought-after Gesha variety. Coffee cherries are grown under forest shade using natural, non-chemical pest management. Selected cherries then undergo a fully washed process before being set out to dry on patios under the rich Mexican sun.
