About

Grown between 1,000-1,800 meters above sea level in Chiapas, Mexico, this coffee comes from the CESMACH Women’s Producer Program, a program within the CESMACH (Campesinos Ecológicos de la Sierra Madre de Chiapas) Cooperative. 

The CESMACH Women’s Producer program was started in 2011 and was a massive step toward increased empowerment for women. Coffees from this program are bought at a premium that is paid directly to women producers and has been able to fund construction of vegetable gardens and women’s health programs.

These coffee cherries were carefully hand-picked, depulped, given a 12-18 hour fermentation to remove the mucilage, and slowly dried to preserve the complex fruity, floral, and balanced flavors that are a result of high-grown Mexican coffee.

CESMACH farms are located in the buffer zone of El Triunfo Biosphere Reserve in the highlands of the Sierra Madre, one of the most diverse forest reserve areas in the world. Coffee varieties contained in this specific lot include: bourbon, typica, and mundo novo, which are among the most common in this region. The climate and altitude conditions are excellent for producing high-quality, and extremely interesting coffees with complex and balanced flavors.
